Having gained experience in the kitchens of Momofuku Ko, Forest Avenue and The Ledbury, Hugh’s style of cooking is a modern take on classic New York Italian cuisine. Leading a young team in the kitchen, Hugh also works closely with the front of house to ensure that the dining experience is fully rounded for each customer.
Declan MaxwellRestaurant Manager
Declan has had a long and illustrious career in hospitality, having previously worked at Chez Nico in London, and La Stampa and Chapter One in Dublin. Leading the front of house team with a mix of professionalism and personality, each staff member is both knowledgeable and welcoming. We aim to make sure that each guest is made feel special.
Jane KupenGeneral Manager
Jane has worked in John Farrell’s restaurant group for five years. From overseeing the day to day operations, administration and reservations, to organising functions and working with Hugh on new menus, Jane also works closely with Declan and the Front of House team for service.
Originally from Croatia, Vanda spent most of her life working in wine bars and vineyards gaining first-hand experience with the industry. Since moving to Ireland, she has pursued her career further and is currently a WSET Diploma Student, as well as doing stages and harvests around the world as often as she can.
